Characteristics of Vanilla

Vanilla is a plant with a climbing, fleshy stem that produces aromatic woody fruits 10–20 cm long. It belongs to the Orchid family. There are more than 100 different species, the best known being Vanilla planifolia. This species is used in the food industry mainly as a flavoring agent and in the production of cosmetic products.
The plant grows in tropical climates, in sunny locations and fertile soil. It can reach a height of 3 meters. The flowering period lasts 2 months, with gradual development of the flowers. The vanilla flowers, white or yellowish, are large and impressive, with a delicate texture, in contrast to its leaves, which are thick and resilient. At the end of flowering, the flowers turn into fruits that resemble green beans. The ripening period of the fruit lasts 9 months. Once the fruit enters the stage of hardening and drying,
it changes color and develops the enzymatic processes that lead to the creation of its characteristic aroma and flavor.

History of Vanilla

The first people to domesticate vanilla were the Aztecs of the coast of Mexico, who considered the plant sacred, believing it was a gift from the gods. For many years, the flowers adorned temples and were placed at the entrance of homes to bring good fortune. Later, vanilla began to be added to various beverages prepared by the local people, and in 1500 vanilla travelled for the first time to Europe, destined for Spain. There, its use in food production began, for its aroma and flavor. The well-known Bourbon vanilla, widely available on the market, took its name in the early 19th century from the island of the same name that produced it. The cost of vanilla ranks among the highest worldwide, as it comes second only to saffron.
