Persea americana, commonly known as avocado, is an evergreen tree of the Lauraceae family, native to Central America and Mexico. The avocado fruit, which is botanically a large berry with a large seed, has become popular worldwide due to its high nutritional value and beneficial health properties.

- Fruit: The fruit is round or oval, with a thin or thick skin, depending on the variety, and a green to black hue. The inner pulp is rich and creamy, with a color that varies from light green to yellow.

Chemical composition of avocado:
Avocado is considered a "superfood" due to its high nutrient content:
- Monounsaturated fatty acids: The largest source of fat is oleic acid, which makes up about 70% of its fat and helps improve cardiovascular health.
- Fiber: Avocado is rich in soluble and insoluble fiber, which supports good digestion and maintaining gut health.
- Vitamins: Avocado is rich in vitamin K, vitamin E, vitamin C, vitamin B6, and folic acid (vitamin B9).
- Antioxidants: Contains carotenoids such as lutein and zeaxanthin, which are important for eye health.
- Potassium: Its potassium content is higher than that of bananas, helping to regulate blood pressure.

 Properties:
1. Cardioprotective effect: Avocado's high content of monounsaturated fatty acids, especially oleic acid, helps reduce "bad" LDL cholesterol and increase "good" HDL cholesterol, promoting heart health.
2. Antioxidant activity: Vitamins C and E, together with carotenoids, provide strong antioxidant protection against free radicals, preventing cellular damage and aging.
3. Supporting eye health: The carotenoids lutein and zeaxanthin concentrate in the retina and protect against oxidative damage and macular degeneration.
4. Blood pressure regulation: The potassium contained in avocado helps regulate blood pressure and protect against hypertension.

Avocado oil is one of the few edible oils that is not derived from the seed. It is pressed from the fleshy pulp surrounding the avocado pit. Unrefined avocado oil from the Hass variety has a distinctive flavor, is rich in monounsaturated fatty acids, and has a high burning point (≥250 °C or 482 °F), making it ideal for frying. Cold-pressed Hass avocado oil has a bright emerald green color when extracted. The color is attributed to high levels of chlorophyll and carotenoids.  

Avocado oil has a similar monounsaturated fat profile to olive oil. Avocado oil is naturally low in acidity, which contributes to its higher burning point. Unrefined avocado oil can be safely heated to 480°F (249°C). Both raw and refined avocado oil can be safely used for almost any high-heat cooking, including baking, frying, grilling, and sautéing. Like all oils, the more refined it is, the higher its burning point. Each 30 mL serving of avocado oil contains 3.6 mg of vitamin E and 146.1 mg of beta-sitosterol.

Avocado oil works well as a carrier oil for other flavors. It is high in monounsaturated fats and vitamin E. It also enhances the absorption of carotenoids and other nutrients.

After the avocado flesh is dried to remove as much water as possible (the flesh is about 65% water), the oil for cosmetic use is usually extracted with solvents at high temperatures. After extraction, it is usually refined, bleached and decanted, resulting in an odorless yellow oil. Cold-pressed edible avocado oil is generally unrefined, like extra virgin olive oil, so it retains the flavor and color characteristics of the fruit flesh.
