Quinoa salad with superfoods
Tasty salad with buckwheat quinoa and superfoods.
Our salad is hearty and of high biological value as it contains:
✔ The essential amino acids we get from quinoa. Amino acids are the building block we need for protein synthesis.
✔ Buckwheat, with its detoxifying properties, takes care of ideal sugar levels.
✔ Goji berries are a valuable source of iron and antioxidants.
✔ Cranberries will strengthen the health of the urinary system.
✔ Blueberries for good vision and cell antiaging.
✔ Nuts are an ideal source of ω3-ω6, fats for effective hydration and lubrication of tissues.
✔ Fresh seasonal herbs and vegetables that will supply us with vitamins, minerals and vital energy. The recipe is detailed below.
For 4 servings we will need:
- 1 fl. tricolor quinoa
- 1/3 fl. buckwheat
- 1/2 fl. goji berries
- 1/2 fl. cranberries
- 1/4 blueberries
- 1 handful of sunflower seeds/ pumpkin seeds
- Anise
- Fresh coriander
- Rocket
- 3-4 hearts of lettuce
- Thyme
- Turmeric powder
- Ginger
- Olive oil
- Salt
Implementation:
In a saucepan, boil the quinoa and buckwheat with a little salt. When the contents soften sufficiently, strain and then turn off the heat. Then pour the nuts, berries and herbs into the non-stick pan and start working on them at medium temperature. At the same time, add the turmeric, ginger, and thyme and stir until they take color and release their aroma. When they are well cooked, add the quinoa, the buckwheat and finally the olive oil. We continue to cook at a low temperature until all the ingredients bind together. When the mixture is ready, turn off the heat and add the fresh lettuce hearts. The delicious superfood salad contains all six tastes - sweet, salty, bitter, spicy, sour, astringent - and therefore balances all 3 doshas, enhancing digestive fire and smooth metabolism.
It can be enjoyed at any time of the day, as an accompaniment to lunch or as the main course of our dinner.
